Some of our favorite recipes...Cilantro Corn Salsa
- 2 ears corn on the cob, husks and silk removed
- 2 tomatoes, chopped
- 2 avocados - peeled, pitted, and diced
- 1/2 bunch cilantro, stems cut off and leaves chopped
- 1 white onion, chopped
- 3 tablespoons chopped garlic
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- salt to taste
- Preheat grill for medium heat and lightly oil the grate.
- Cook corn on the preheated grill until the kernels are lightly charred but still firm, 3 to 5 minutes per side, turning often. Cut kernels off the cobs, transfer to a large salad bowl, and let cool.
- Mix in tomatoes, avocados, cilantro, white onion, garlic, olive oil, and red wine vinegar; season with kosher salt.
Parmesan Grill Roasted Corn on the Cob
- 1/2 cup mayonnaise
- 5 ears corn, husk and silk removed
- 1 cup shredded Parmesan cheese
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- Preheat an outdoor grill for medium-high heat and lightly oil grate.
- Brush a thin layer of mayonnaise on each ear of corn. Sprinkle the corn with the Parmesan cheese, chili powder, salt, and pepper. Wrap each ear with aluminum foil and place on the grill.
- Grill, turning occasionally, until the kernels begin to brown, about 10 minutes.
If your steamer pots are otherwise engaged or you just don't want to heat up your RV kitchen....and you've got a lot of mouths to feed, "Cooler Corn" is the perfect solution for you.
Start with a clean cooler and fill with your husked corn. Add boiling water to cover the corn, about two kettles, and then close the top. Leave the cooler unopened for about half an hour and your corn will be done perfectly. It can even stay there in the cooler for several hours and still come out perfectly. Easy-peasy...
