Snack - Quick Cake in a Mug

                           Cake in a Mug

My daughter, Honey, brought this quick, fun dessert to my attention....

If you're on the road and need a quick sweet treat, "Cake in a Mug", is perfect.   You can  make one individual serving, dress it up or down any way you like and satisfy that sweet tooth for a minimal amount of calories.

First, you take one box of Angel Food Cake mix and one box of any flavor cake mix you'd like.   Pour them both into a gallon zip lock bag and combine.    You can store the mixture in the bag or put it into a tightly sealed plastic container.   I keep two flavors on hand, chocolate and vanilla, but you can mix any flavor you want.

Now here are the directions and don't blink because you'll miss them.

Put 1/3 cup of the mixture in your coffee mug
Add 3 tablespoons of water
Stir until it's like batter
Microwave 1 minute only

Take it out of the microwave, and believe it or not, you'll have a mini cake!   You can add
a few fresh strawberries on top, or a tablespoon of some whipped cream, cherry pie filling or lemon curd...or hot fudge...or even a small scoop of ice cream.  

All I can say is it's delicious and so easy to do!   As an RV'er, my oven is small, I don't have room to carry a big cake, plus "Cake in a Mug" is just one serving, ready fresh when I want it....and portion controlled so I don't eat too much.
