Grilled Banana Boats Recipe

One of my favorite desserts that I learned camping out with the Girl Scouts.  Your family will love it too around the campfire whether you RV, tent, or just grill in the back yard.

INGREDIENTS:

1 firm, ripe large banana per person

 chocolate chips

 miniature marshmallows
chopped pecans

DIRECTIONS:

1. Cut a  sheet of heavy-duty foil large enough to enclose the banana and leave a little

space so the foil doesn't stick to the top of the insides.

2. With sharp knife, make deep lengthwise cut along inside curve of each bananaLeaving the peel on....being careful not to cut all the way through.

3. Open slit to form pocket. Crimp and shape 1 sheet of foil around each banana, forming boats.

4. Holding each banana in hand, fill pocket with 2 tablespoons chocolate chips, 2 tablespoons marshmallows and about 1/2 heaping teaspoon chopped pecans.

5. Seal top of foil, leaving 2 to 3 inches headspace.  Crimp the ends closed. Place on grill over medium heat. Cover grill; cook 8 to 10 minutes or until marshmallows soften.   You can also place in campfire coals to cook.

Of course, you can fill your banana with anything you want...caramel, raisins, peanut butter chips or white chocolate chips...Reese's Peanut Butter Cups is a fav here...along with peanuts instead of pecans.
